This Amarone Classico della Valpolicella is the result of years and years of experimentation and research by Allegrini, which has prepared its own production style that maximizes its fruity component. It is an example par excellence of tradition, territory and peasant wisdom.
It comes mainly from Corvina Veronese grapes, with additions of Rondinella and Oseleta grapes, harvested by hand in the second week of September and left to dry in a special fruit cellar until December. The must ferments in stainless steel tanks at a controlled temperature of 18-22 ° C for 25 days. The wine ages in new barriques for 18 months and for a further 14 months in bottle before being released on the market.
Dark ruby red in glass, it is characterized by hints of ripe red fruit and light spicy notes. On the palate it is deep and very thick, with refined tannins that give vigor and strength, preluding a velvety finish with pleasant persistence.
Perfect in combination with braised meat and grilled red meats, it goes well with game, very mature cheeses and all sweet and sour dishes of Asian cuisine.
